Carrots

A friend of mine gave me a big bag of young carrots earlier today that should be used as soon as possible.
I could feed my dog with a couple of them, but that still leaves me with a scary amount of carrots.

Do you have any vegetarian, dairy free recipes? Any tips, suggestions?

Roast them with cumin and turmeric, yum! Some people use honey too but I don't think they need it if they're fresh and sweet. I love roasted carrots.
Things fall apart, it's scientific.

When I prepare carrots as a vegetable I boil them, drain them, and then add butter and brown sugar. The heat of the pan and the bit of moisture that remains after draining the carrots will melt the butter, and mixing the butter and brown sugar will make a nice sauce. For a dairy-free version I would omit the butter.

I just made a lentil salad the other day that is my copy of one a tapas bar in my neighborhood used to serve. Lentils, thinly sliced green bell pepper, carrot and red onion, marinated for a day in a dressing of your choice. I use a simple vinaigrette.

I hate cooked carrots so I’d make sticks out of them and eat with hummus.

eat them with french onion dip or roast them with ginger, honey, oil and a little chili pepper

Grated carrots
Cashews
Candied ginger (diced)
Sesame seeds
Seasoned rice vinegar
Sesame oil (a few dashes to taste)
Options: add Kimlan soy sauce to dressing, substitute fresh ginger

Thanks for all the recipes!

I made carrot spread in the end. It wasn’t completely dairy free but what the heck.

It consists of:
Finelly grated carrots
Finely diced onion
Finely diced half of capsicum
Cream cheese
S&p
All combined together.

It was lovely on our sandwiches.
