Salmon !!!

I am going to be on a fish wheel permit on the Copper River starting this summer. It'll catch mostly sockeyes, but also some kings.

A fish wheel is a device that is used in glacial rivers in Alaska to catch fish. The wheel uses the river's current to turn, with cages to catch the salmon before depositing them into holding tanks.

This means I will be able to retain hundreds of salmon. While I don't particularly care for salmon, I could eat it every day. I feel like I should, given this opportunity.

Would you eat salmon in such volumes if it was available?

I like salmon well enough. Not my favorite fish, but it is ok. That said, hundreds of salmon? I presume you will be sending some to everyone on PS.

Smoked is Best and there are a lot of ways to smoke fish.

Also Gravlax both plain & BBQ'ed; pickled can be a treat and not nearly the ordeal of canning.

For Sunday dinner Salmon Wellington or Thai Red Curry-the Wellington in particular is outstanding cold so make lots.

I could probably eat it 3 or 4 times a week, at least, if given the opportunity.

So please pack some of that up in dry ice and ship it this way. Or visit SF with a suitcase full?

Salmon are not freshwater fish. Pretty much everything attracts bears, so it should be business as usual.

Smoked salmon is delicious. I could eat it maybe 3 times a week. That Thai red curry with Salmon sounds terrific.

There's an Indian Restaurant in Squamish that does a great Salmon curry dish. I just googled their menu and I think this is it.
TANDOORI WILD SALMON MASALA
Filet marinated in yogurt and spices, cooked in a tandoor noven and served with peppers, cabbage, mushrooms and onions in curry

Friends went on a fishing trip to Alaska years ago and brought back pounds of smoked salmon. We ate ridiculous slabs of it with cream cheese on ritz crackers, the memory of it makes my mouth water.

That's how I do it-the idea of cooking the fish first/taking it out then putting it back in at the end to cook again is anathema.

It does taste better on the bone but doesn't always cook better.

Consider yourselves fortunate to have the wild variety.Tasmania does a huge amount of salmon. All farmed however. The saving grace is the smoking process otherwise you'd be chowing down on tasteless gloop. The closest we get here is sea-running trout. We don't do bears either btw.

Edited to add, yes we do bears but they're so lazy that fish would be a mile upstream before it registered to lash out.

The Copper River (Ahtna in Athabascan) has more salmon than any other river on earth (after the Columbia was destroyed). As a bonus, its salmon are also believed to be the tastiest, and are marketed and priced that way. They fly it to Anchorage and Seattle by the 737 load when the season opens in May.

There are landlocked, i.e. freshwater, Atlantic salmon in lakes in eastern North America.

We have something like that salmon wheel here in Baltimore, but we don't use it for salmon. Mr Trash Wheel.

I once had smoked wild Atlantic from Iceland it was decent-not in any way exceptional but acceptable.

Don't you live in Anchorage? Isn't the Copper River a long drive from your home?
Are you in a partnership to help when the salmon are running?
Do you agree the sockeye salmon makes the best smoked salmon?

I'm cooking salmon tonight. I have a recipe where you cook it at a low temperature and it turns out perfectly. Super moist. Trying to decide on sides.

I do live in anchorage but the wheel is on the road system which makes it nearby. I do dipping trips within a 24 hour window.

It’ll be a partnership of sorts. A friend was on a wheel permit and some of the others on it have retired so he asked. If I was interested. I’ll miss the action of dipping but this should be fun. The way it works is each family on the permit has to cover so many days when the runs start, so we’ll likely drive out with the camper for a few days or the week and keep an eye on the wheel. There will probably a fish delivery or two back to anchorage if the runs are strong.

Sockeyes are my favorite and they are the best for smoking.

My smoked bellies are always in high demand. So many people chuck the bellies or save them for bait. Fools.
