I do fish sauce instead of salt 90% of the time. I can't get enough unami. It's good in a Caprese salad too.

When I was your age, they had salt and kosher salt. And knowing about kosher salt outside of jew-dom gave you deep foodie cred.

Walmart has $2.99 half-pints of excellent fresh guac with tons of ascorbic acid in it to keep it green. I'll never bother to make it fresh again.
If you want to avoid the Walmart experience, Costco sells 4-packs as well. You can freeze three and eat them one at a time; it takes well to freezing.
Up till around the 90's, sour cream was def. included in most guac recipes. Since Troll Handle lives in a culinary time warp, she's well within her rights to glop up her guac.
Maybe in London or NYC, but definitely not in Tucson.

I was once witness to a big fight about adding garlic to the guacamole. Then they both turned on me and basically said "I will kill you unless you agree with ME,"
at which point I left the room.

I actually like garlic in my guacamole, but it's not very Mexican.

Lime juice stops your guacamole going brown. Also, eating it.

If you’ve ended up with a critical amount of extra guacamole then you fucked up.
Guacamole needs lime juice too.

I am a huge fan of Mexican food.

But "guacamole" is Aztec for "how to fuck up an avocado".

Add lime, pepper, chipotle flakes, chopped cherry tomatoes and a spoon of sour cream to your squished avocado. That way there's never any left over to go brown.
creme fraiche is good too or both. This is def ^ yummy! Plus cilantro/homemade pico

In Mexico, that would be guacamole, that's actually how it was done at home growing up (sans the spring onion and sometimes without tomatoes). Chunky and simple. Just a little bit of lime juice and a pinch of salt.

Actually, any form of mashed avocado used as condiment/sauce is guacamole. Whatever you want to add is optional and it's ok. There are no rules around it.

This seems like a good place to whine about lunch at work today. They had pico de gallo on the menu board, and it was tacos and quesadillas for lunch, so it seemed appropriate.

But what they had done was heat up a bunch of corn with little slivers of red onion and small chunks of tomato and serve it as a cooked vegetable. Which was extremely bland and not actually worth eating in any way.

And they just had ordinary salsa out of a jar to put on the tacos/quesadillas.

Sigh.

You should get dashi powder. I use it instead of plain salt for the umami.
