Tis the season to eat Pumpkin and Squash

Gorgeous looking little munchkin pumpkins and big heavy squash abound in the supermarket.

We made lovely sweet muffins with 100g flour, sploosh of baking powder, a big sploosh of sweet cinnamon powder, 4 eggs, 100g milk all whipped into a batter, 6 generous handfuls of grated squash mixed and cooked in muffin tray at 170 for maybe 15/20 min. There's still loads of squash left as well as the pumpkins. So, what are your best recipes please?

Please note than babies can't have sugar, salt (max 1g/day total) nor honey, and I don't have cream (milk is fine). So recipes without that crap will be appreciated more and recipes with that will be amended at random and judged just the same.

I like squash in curry. Coconut curry especially.

Butternut squash cut into cubes, lightly toss in olive oil, s&p, roast in the oven. A dash of cinnamon or nutmeg if you like.

TH - wow, I finally got an award!!!

Well, there are many kinds of squash, and they don't all taste the same. If we are talking butternut squash while it is similar in taste I find it a bit different. I like butternut but just roasted with some butter (ok a lot of butter) and pepper on it. Maybe if I had pumpkin that way I wouldn't mind it, I don't know, I have never had it that way. I do appreciate the old grouch title. I always pictured myself as Klugman's character in "Grump Old Men".

Was going to suggest a Japanese pumpkin dish but am not sure it's substitutable with the standard pumpkin variety available here. Anyway, it's delicious, very typical, called Simmered Pumpkin - kabocha no nimono.

Basic ingredients are Soy sauce, mirin, sugar, dashi - available in packet form from all Asian shops, could substitute with a basic stock. There are plenty of videos out there if you're interested.

Thanks Andrea, it breaks both the salt and sugar rules though.

It isn't a butternut squash, it's a Greek one, very orange, sweet.

I made us tasty pinwheels using puff pastry; boiled the squash and mashed it into lightly pan-fried red onion, garlic, coconut flakes and ginger with a spot of butter. Rolled, cut and 12 minutes at 170. Delicious.

Still half a squash and the munchkin pumpkin to use if anybody has other ideas.

I like to roast the squash after smearing it with a paste made of olive oil, cumin, ground coriander seeds, red pepper flakes, ground fennel seeds, and garlic (and salt and pepper). I leave them in long 1/8ths with the skin on but you could peel and dice them, too.

Well, I wouldn't have lamb because I'm not a barbarian but you could. I often have it with braised lentils with rosemary and something green like a salad.

No not balls. Here's the recipe, pretty much, that I use. It's from Jamie Oliver. I find this method keeps the lentils moist but not watery. I substitute anchovies in oil for the pancetta.

I like making pumpkin soup, or acorn squash halved baked with a filling of savoury custard. Roasted too!

Well I had my doubts, but our vegetarian friend liked it well enough, and it was pretty tasty when I revised the recipe to include more mushrooms and cheese and spinach. Think quiche in an acorn squash.

For a cooking forum, this group are bloody useless. "Soup" is not a detailed recipe! Neither is "curry", even if it's mmmmmmm. And why has nobody given me a working pumpkin pie recipe without cream, sugar and salt?

If you have a potato ricer, you can indeed make a ten quid side dish of pumpkin and apple pancakes.

What's a potato ricer? Surely I just make a savoury batter, grate in some pumpkin, add a suitable spice (cinnamon, nutmeg, whatever) and cook?

Yeah, upper medium boiling. the food needs to be able to go thru the sieve part of the ricer. VERY satisfying, that.

In a german restaurant where the potato dumplings seem so light, it's down to ricing. Nice to take the water out of spinach too.

I suspect you're getting rid of a lot of nutrients with this ricing approach Beat. Would make for fantastic gnocchi though.
