What exactly is American cheese?

I saw this on everything this past winter when I was south....

Is it just cheddar? Canadian cheese here could be any variety from Brie to cheddar to Limburger...

i think most people these days mean something like Kraft Singles when they say American cheese

"American cheese" has a legal definition as a type of pasteurized processed cheese under the American Code of Federal Regulations.

Cheddar is British. Most countries make their own.

American cheese is processed cheese made from a blend of milk, milk fats and solids, with other fats and whey protein concentrate. At first it was made from a mixture of cheeses, more often than not Colby and Cheddar. Since blended cheeses are no longer used, it cannot be legally called “cheese” and has to be labelled as “processed cheese”, “cheese product“, etc.

Land O’ Lakes deli sliced American cheese is my favorite. I don’t really think there’s any difference between white and yellow besides color.

It’s mild and inoffensive.
That's the kind of bold flavor they enjoy in Albuquerque!

In Australia, a short-lived product called Vegemite Singles combined Kraft Singles and Vegemite.

Actual American cheese is still available, but is not the same thing as "cheese product".

It is excellent in grilled cheese and other cooking but otherwise useless.

I don't consider it excellent in anything. There are better melting cheeses for sure. Kraft singles are not the same thing found in a decent deli though. The deli stuff is bone white and edible. Kraft singles are awful.
