I've never made it, and found this recipe on line that looks good and has great reviews. I'm open for other suggestions.

I´ll just make a chicken stew, with:

-roast chicken (usually the white meat)
-more spices/veggies I like: cumin, culantro, cilantro and corriander seeds, chili, garlic, crushed tomatoes, tomatilos, aneheims, etc
-I actually add ruccula at the end
-no cheddar
-prefer corn tortilla chips, at the end, as a garnish.

Pretty easy:)

oh and I love full fat sour cream or similar type white cheese as a garnish too, along with cilantro (fresh)

I make one that's different than the link you posted- it's more light and fresh. It's my favorite way to use up fresh tomatoes in summer. It's one of the best soups I make.

Tomato & Tortilla soup

4 or 5 green onions, chopped
3 cloves garlic, minced
jalapeño, seeded and minced (or not if you like spicier)
3 large or equiv. small ripe tomatoes, coarse chop (can def. use extra if desired)
8 oz tomato sauce
2 cups chicken broth
1 tsp cumin (or more)
salt & cayenne, maybe 1/4 tsp each
1 pound boneless skinless chicken cut into strips (I use breast)
1 cup or more corn kernels (fresh is best, frozen ok)
squeeze of lime juice
4 corn tortillas cut into 1/2" strips and oil for frying

Heat oil in pot or dutch oven, fry tortilla strips in batches to make your own crisps. Remove to plate with paper towel to drain.

Add onion, garlic and jalepeno to pot (more oil if needed), cook about 2 minutes until soft. Stir in tomato, tomato sauce, broth, cumin, salt & cayenne. Bring to a boil, then down to a simmer for about 5 minutes to get the flavors blended. Add chicken and corn, cover and cook another 5 or so, till chicken is done. Finish with a squeeze of lime, serve with tortilla crisps on top (and some cheese if desired).
Things fall apart, it's scientific.

I make a good/simple chicken lime soup but have never made the tomato-based tortilla soup. However... I had the best Tortilla Soup I've ever eaten in my life a couple of weeks ago when I was in Mexico City. I will post a picture when I can.

Is there a way to post anonymously on this? This will once again prove that I am indeed a low class loser, but this is actually pretty good. Blame my wife, it is her recipe

1/2 roasted chicken (I just get the one for like $4 already cooked from the store)
1 medium onion diced
1 biggish clove of garlic minced
1 can tomato soup
1 can corn
1 can pinto or kidney beans
1 can roasted chilies
1 can diced tomatoes
1 can of beef broth
1 t cumin
1 t chili powder
chopped cilantro (I don't know how much...some)


Staute the onion and garlic in some olive oil. Open all the cans and dump them in a pot (that's right, I didn't say to drain them)with the chicken, cumin, chili powder and cilantro. Cook for about 20 minutes. Put some crushed tortilla chips and shredded cheese in a bowl. Add soup.

Thanks for the responses so far. Using canned anything besides tomatoes, corn or tuna, isn't really an option here. It's imported, considered gringo food and crazy expensive. A 500ml jug of Roland brand :? maple syrup goes for 20,000 colones, or $ 35.27 USD at today's rate.

This is my contribution to the thread. I can't even begin to tell you how good it was. The bowl with the lady 'topper' was an interesting touch. Apparently 'traditional'. Keeps it warm.

That bowl is awesome. I love Mexican glassware too and wish I had collected some when I traveled there. What's the dark red stuff on top of the what I'm guessing is sour cream?

Tortilla soup is the wierdest concept and when I first heard about it I assumed it wouldn’t work at all. Then I tried it and it works, it shouldn’t but it does.

I made Tortilla soup over the weekend using the recipe I posted with a few changes. I boiled a few chicken breasts (bone in), pulled the meat off and continued to reduce the broth with the bones. The soup turned out great and I liked the chicken not being in chunks as the recipe called for...will make it again.

I agree, I wouldn't chop chicken for tortilla soup or for many recipes. I like the rustic texture of shredded chicken.

I made Chicken Tinga for the first time today. Not sure if I pulled it off because I've never tasted it before. We made some pretty awesome tacos with the chicken.
