Prepared Thai curry paste

How does this stuff stack up against the native made stuff when you're on scene or pounding out your own if not?

The product I get (Mae Ploy) comes wet in a vacuum sealed bag. I've had good results (the red is really fricken hot though) and it's so easy it seems like cheating.

One brand I got was way too salty, but that doesn't seem to be on the shelf of the market anymore.

I think I'm done pounding out my own Indian curries too - there are a lot of places selling excellent fresh ready made packaged.

I agree with you. Other than finding a few brands that I'm not thrilled with.

Another great thing about good tasting curry pastes is the consistency in taste when you replicate the dish at another time. I tend to add some extra things (fresh lime, fish sauce, whatever) in some of them but there are a few brands I really like.
I can picture in my mind a world without war, a world without hate. And I can picture us attacking that world, because they'd never expect it.

The issue I have with prepared brands is far too much Salt-Mae Ploy in particular is bad in that regard as it Patak's.

Does anyone have a good brand of prepared pastes?
Anyone can go by horse or rail, but the absolute best way to travel is by hat.

I make my own but just because I enjoy making them. Thais use the prepackaged stuff, so I don't see why us farangs shouldn't.
Testicles have an interesting texture -- I think because of the epidydimis -- but they don't have a lot of flavor of their own. VinnyD

Jeez, I wish the chef who cooked the Mussaman curry I just ate had used a prepared paste. It was so bad I felt like walking into the kitchen and showing the chef how to make it. But I'm English so I ate most of it and then told the waiter it was very nice.

Mae Ploy is my go to paste, nothing else comes close. But it is salty so that limits how much you can use. Add extra herbs and chilli but not more fish sauce seems to work.
