Fave/or last minute curries you make?


Tonight last minute made curry. Super quick:

sauteed shallots, coriander seeds, gingerroot, onions, fresh curry leaves, Annaheim chilies, whole cumin seeds in basil olive oil, Tabasco...and some other spices/herbs. Then added cut up chicken breast, a few more spices. Then a can of stewed tomatoes and some water. Seasoned it. Served it over leftover brown/red/black rice.

15 minutes including cutting up everything.

Those Japanese curry sauce packets are quite good.
Anyone can go by horse or rail, but the absolute best way to travel is by hat.

You must be A LOT faster in the kitchen than I am. It'd take me 15 minutes just to get all those ingredients from my fridge and cabinet onto my table and my cutting board out. Not to mention prep.

Also I prefer to give my curry at least a half hour to simmer so the flavors mix. Usually more like an hour.

I make it up as I go but lately I stir fry some onions while pounding garlic, pepper, salt, cumin, curry powder, etc (maybe turmeric, coriander powder, whatever else I have around) in my mortar. Then the spice paste goes in with the onion and everything gets stirred a bit longer until aromatic. Then goes in stock or water.

Then, depending on what I'm adding - usually potatoes and chicken, those go in at their appropriate times so they'll be done cooking when I'm ready to eat.

No less than an hour of prep and cooking.

When my dad worked he liked to have lunch with the ladies from the factory because they couldn't believe his wife didn't make his lunch and they would feel so sorry for him and share their fantastic food with him. He was surprised to learn that the Indian workers used Pataks. They apparently thought it was hilarious that he had assumed they spend all their time grinding up spices to make "authentic" curries.

The quickest curry I've made is the famous Sri Lankan Fish Curry, and that took about an hour, if I remember correctly. Maybe a bit less than that.

Patak's rules.

Chicken thighs and/or legs, skin off bone in.
Stick 'em in a casserole dish or similar with:
3 tablespoons Patak's Balti or Madras paste
4 tablespoons natural yoghurt
1 black cardamom pod
1 large onion, thickly sliced.

Cook in the oven at 180 for an hour and a half (this is where you lose time)

Finish with chopped coriander, green chilli and 1 tablespoon hot mango chutney.
