Almond Breeze for Curry Base?

So someone just gave me a couple litres of Almond Breeze (Almond/Coconut flavour) has anyone even used this to make Curry?

What else might it be good for apart from smoothies?

Pretty thin for a curry base. Actually tastes pretty good- I think I've had it in coffee. Or for cocoa.

I oddly don't use it for curry, but do use it for bechamel (when I'm making mac & cheese).

I do put it in smoothies and it makes for an awesome Brown Cow with Kahlua (something about the nuttiness).

Something to keep in mind is that Almond Breeze uses carageenan as a thickening agent, so that can fuck things up sometimes.

With curries ranging from wet to dry, of course you can use it.

So the first container I decided to use for smoothies-Papaya IIRC-it was good but not as good as regular (1%) cow's milk.

The second container was used for

1-Assam Fish Paste w/Halibut-surprisingly good almost outstanding-used a new brand of paste that made all the difference.

2-Thai Red Curry w/Tuna good but not great lacked the smooth mouth feel of Coconut Milk but was a worthwhile experiment.

If the stuff wasn't so expensive I can see using it for as mentioned a vegetarian curry or better yet a Basmati pilaf-the nuttiness would be exquisite.

So if one of your friends stops by and says 'I just found this bag of groceries on the bus you want some' (true story) dive right in you never know what you'll find.
