Prawn Curry Recipe?

I'm looking for a good one since I ended up buying the wrong kind of shrimp/prawns for another recipe I am making and had to go get another pkg of the right kind and therefore have an extra bag of prawns. I thought I may as well add prawn curry to tonight's menu and I know a few of you have talked about making it quite often.

HELP! Thanks muchly.

You people are NO help at all!!

I have had to resort to some abomination of s8's SriLankan Fish Curry recipe. I'm making it with prawns instead, and less coconut milk and more heat (bird's eye peppers). We'll see how it turns out...

If it flops, I blame YOU.

Anyone can go by horse or rail, but the absolute best way to travel is by hat.

I just make whatever curry I fancy with prawns. No special prawn curry needed.

I used the recipe that s8 poster before for Sri Lankan fish curry but used prawns instead. They were cooked perfectly. It was good.

I made this once, Keith Floyd's Prawn with Mango and Ginger:

groundnut oil
4 carrots, cut into matchsticks
small bunch of spring onions, cut lengthways
2 green chillies, seeded and roughly chopped
2 red chillies, seeded and roughly chopped
40 g (1½ oz) fresh root ginger, cut into julienne strips
3 garlic cloves, finely sliced
10 plum tomatoes, skinned, seeded and diced
salt
12 large prawns, the biggest you can find, heads taken off and shelled except for the tail, deveined and butterflied (that is, cut lengthways along the back)
2 mangoes, skinned and cut into wedges
4 tablespoons rum

Heat a little oil in a wok. Add the carrots and stir-fry for 30 seconds, then add the spring onions and stir-fry for a minute. Add the chillies, half the ginger and the garlic and stir-fry for 30 seconds. Add the tomato dice and stir-fry for another minute. Season. Remove and place in a warm serving dish.
Wipe out the pan, add a little more oil, and when it is very hot quickly seal the prawns on both sides (they will open out like butterflies). Add the remaining ginger and the mangoes. Splash in the rum and flambé.
Arrange the prawns, ginger and mangoes with their pan juices on the bed of stir-fried vegetables.

Serves 2 - 4.


Not really a curry and incredibly labour intensive what with deveining all the prawns, julienning the vegetables etc but very tasty.
