I was a stalwart Green fan for ages but of late my allegiance has switched to Red-one simple Salmon fillet in Red Curry turned the tide as it were.

Of course the paste is everything there are so many better ones available here now.

It depends what you are eating with it. Green for chicken or mussels and red for duck. I think I tried making something with yellow once and it was meh.

My favorite is not on your list-Penang curry
Dunno if it is typically Thai but it has been on the menu at every Thai restaurant i have been in

Red. Goes great with everything, and can easily be made more sweet, sour, or spicy, depending on the ingredients and the mood of who's cooking/eating it.

I use red curry when I do mussels. It's excellent.

Penang is in Malaysia.

I haven't been in Thailand since the eighties, but restaurants there didn't use to have the mix and match type menu that has become typical of Thai restaurants here. (Choose your main ingredient and the color of your curry.) I don't know if they do now. The first Thia restaurants I went to in the west (and in Riyadh) didn't have that either. I don't know when it became the standard.

Vinny I didn't see any restaurants in Thailand that had a mix and match choice. It was just _____ curry and came in whichever color it came.

Then again, I could rarely read the menu, so maybe it said it was optional somewhere. I was just pointing at stuff.

Maybe I'm confusing the Thai green with the Filipino green that is mostly coconut milk and little spice. I tend to order red anyway though.

For beef I prefer green or massaman curry.

Red is great for everything else. I especially like "chu chee" curry with duck or shrimp and pineapple.

Another vote for "like all of them".

This might inspire to make something Thai at the weekend.
Testicles have an interesting texture -- I think because of the epidydimis -- but they don't have a lot of flavor of their own. VinnyD

Lovely dinner. Fish steamed in lemongrass ginger something broth. Green curry with pork.

And I asked the waiter/chef/owner how long he'd had the place. Since about 1981 (with his wife). Which was about when I first visited that place. The decor had been upgraded but it was still more or less the same place. Made me happy.

I picked red. I think that's because I had so many green curries when I was there that I actually got just a tiny bit sick of them. But also, I just love the flavour of red curry.
