Key lime Pie

Post by judik » Sun Aug 18, 2013 1:16 am

Public service announcement-it takes 19 key limes to get enough juice for a standard recipe
Good thing i have an electric juicer

This post made me realize I have never had key lime pie. Never. Ever.

And I love lime.

Pics tomorrow! I am making it on the request of my son for his bday
Also making a berry tart

Key lime pie is easy and so good
Three ingredients-sweetened condensed milk, egg yolks and the lime juice
oh,and whipped cream on top so that makes four!

My beef with getting key limes from the grocery store is that they are seldom ripe. They always seem to pick them green. A ripe key lime will be yellow and pretty juicy. Sometimes the grocery store key lime nuggets are so unripe it's almost impossible to get more than a couple of drops of juice.

Bearss limes (std grocery lime) are better when they are just starting to turn yellow too. IMO.

Microwave your lime for 10 seconds prior to juicing and you'll get loads more juice.

I made a key lime pie a few days ago, not using actual key limes. I used regular limes. I really liked it, but my friend found it too strong and thought it might have been better using less lime juice.
I followed this recipe.

https://www.littlesweetbaker.com/no-bake-key-lime-pie/

Some of the trees are producing quite a few limes right now, so looking for other lime dessert recipes, or other suggestions.

I prefer using a no-bake crust...why? I suck at making pie crust and the flour is a lower quality, or different from back home. It took me a while to adjust the thin crust pizza dough recipe using ingredients here.

Graham wafer crumbs are not available so I've been using these and melted butter with great results for pie crust.

Do any of you have better lime pie recipes, or lime cheesecake recipes that you'd like to share?

Ledbetter, key lime pie is supposed to have a graham cracker crust, not a short pastry crust.

The whipped cream that judi mentioned above is not part of the original recipe. Fresh dairy was not available in the keys when the ecipe ws developed, wherefor the condensed milk.

Are you suggesting that I fly out of country to pick up Graham wafer crumbs?

No, I mean you are right to use biscuit crumbs of some kind rather than the pastry crust that yu apologized for not making. I should have just said. "crumb crust".

Step 5 sounds impossible to me. I would just cut pieces from the tin and serve.

Bummer about the pie. I was curious how it came out. Not being very sweet is what I like most about key lime pie.

Did you lift the whole pie out of the pan as the recipe says?

Vinny do you know a good recipe? I have never eaten it.
Some images have whipped cream on top, some have a merengue.

Or anyone else?

I would like a traditional one.

I've never made it. But traditional is a graham cracker crust, key lime juice if you can find key limes, condensed milk, egg yolks, and sugar, with a meringue.
