SG,

Sorry you over heated it. Have you ever tried just pricking the pepper with the tip of a knife in several places and then tossing it in. Removing it before serving. It tends to give a good flavor and little heat without adding so much heat.

I know this doesn't help with this tragic accident but it might prevent a future tragedy.

That's what I did, Stan! It wasn't even a whole scotch bonnet, just a piece of one. I tossed it in just for a few minutes and then pulled it out but it was too much. Those suckers are powerful.

My guess is that using a piece of one actually produce more heat than a whole one un-cut would have. Of course I could be completely wrong, I often am, ask my wife.

Hmm, you may be right, there, Stan. I see your point. Alternatively I could just stop trying to use up the scotch bonnets I grew. I'm sure I can give them away to someone with a mouth made of saddle leather.

I need a good recipe for caldo verde. I made it using section8's basic directions and replacing the sausage with chick peas (as per his recipe...) and I liked it, but Mr_Scrubb did not. At all.

So I need a recipe for the "normal" version and then use some kind of free-range chicken sausage, and see if he likes it better. I have a lot of kale.

That looks so good, I might have to have steak tomorrow.

I had baked chicken breast, steamed broccoli, & brown rice, with some soy sauce. Yeah, boring AF, but always tasty.

Steamed/poached salmon fillet with char grilled asparagus....I could eat this daily at the moment. Super yummy. And Ted eats the salmon skin,win win.

Last night was baked trout with roasted carrots, potatoes, and asparagus. Not far off what Jess is into, just a different cooking method.

Tonight I tried a new recipe: Loaded Cauliflower Soup from Cooking Light magazine. It turned out great! That makes me happy, because I have a shit ton of leftovers.

ETA: This recipe wasn't much different than my usual potato soup recipe, I just hadn't done it with cauliflower before. I just used my stick blender in the pot rather than their silly chopping hot vegetables thing.

I made tomato soup and a grilled cheese sandwich. It's not something I grew up with or ever made before, but I know it's considered a classic and wanted something other than my usual stir fries and what not.

I made Sri Lankan fish curry. About to eat it. It was great last time, so I hope I didn't screw anything up this time.

I had quite a few so I ended up doing them 2 ways. I pan seared some and then added butter, garlic, white wine, lemon zest and some red pepper flakes, and then once the wine had reduced I added mushrooms and some cream. That is for the pasta.

The other thing I made (it was soooo good) was more like an appetizer. I mixed some panko bread crumbs with grated parmesan cheese and put a layer in a glass dish, then scallops on top, dotted it all with butter, s&p, and added a bit of cream, parsley, chopped green onion and lemon zest. That was baked for 15 minutes and then I turned the broiler on, added some lemon and kept an eye on everything until the scallops looked just cooked. It was so damn good.

We only ate the appetizer (baked scallops) so I will try the pasta tomorrow, although I am sure it would have been better eating it just after it was prepared. I thought about not cooking it tonight but I didn't want to leave them raw in the fridge for another day.

There is still some of the baked scallops left as well for tomorrow (and no company so that's all for me!). I'm so glad it turned out. Good scallops are really delicious but tough rubbery scallops are really bad and there can be a fine line between the two.

Oooh, I could go for some ramen right now.

I'm going to grill some italian sausages, steam some broccoli, and cover it all in spicy kimchi. I found a new brand of kimchi that makes my tastebuds dance, it's so damn good.

Pretty good. I think it was slightly better last time, probably because I made the sri lankan curry powder months ago and it's been in a jar since then. SHould have made it fresh, I think. Also, I was rushing a bit and didn't simmer the curry as long as recommended before adding the fish.

I made a stir fry of minced pork, garlic, ginger, sweet potato strips, turmeric, peanut oil, fish sauce, lime juice, chick peas, snow peas, coconut milk and chopped cilantro. It was delicious.

Tonight will be coq au vin. I made it yesterday and it was supposed to be for dinner last night, but then my daughter called and asked if we wanted to come over for carry out. Having a choice of just about anything and a chance to spend time with my granddaughter is and easy choice. So tonight I will reheat the coq au vin. I actually have a feeling it may be one of those things that is actually better after sitting over night. We will see.

I just made a huge pan of roasted veggies - aubergine, mini plum tomatoes, fennel bulb, red and green peppers, basil and other herbs, garlic, olive oil. I have enough to last a week. But today I had some with new potatoes, green beans, and some of the salmon and chermoula that I froze last week.
