Dinner for 40

A local shelter is asking for help next week, looking for a team to provide dinner for 40.

In theory, it doesn't sound so hard. In reality, it could be crap. Soup and salad and bread? BIg casseroles of some kind, especially if I could make them ahead? Even cold sandwiches with chips might be ok.

Please help, so I can possibly help.
Things fall apart, it's scientific.

My mom and sisters used to volunteer at a soup kitchen. I think there was a lot of pasta with sauce or lasagne, with garlic bread and salad.

In their case, the rule was that they had to provide a hot meal, so soup and sandwiches would be out. Even if that's not your place's rule, I think the idea is to give them a real stick-to-the-ribs experience. But they did make sandwiches too, for a boxed lunch that all of the visitors got to take with them for the next meal.

It may sound incredibly middle class but I actually want to know what people in the local shelter would like to eat. I want them to enjoy the food, not to be grateful just because they are fed.

But maybe they don't care much about the food, my sister volunteers at a place which makes meal once a week for locals with low income. They like the social time they get from other guests and the staffs.

You are in California somewhere right? If the weather is still a bit cold, a filling root vegetable soup/tomato soup/lentil soup is a the way to go for a start, with bread.

Meat stew, meat balls or chicken seem to be the budget friendly option for meat, both stew and meat balls can be prepared before hand and kept warm, along side a vegetable stew (mild curry?) or roast veg of some kind + rice/mash (big rice cooker would be ideal in case like this.

How about flan for dessert?

Lasagna, with maybe a veg. one too, because of where you live. Lasagna unites all classes. Roast the fuck out of the veg. so it’s not too watery.

If you decide to do lasagne you may go Italian and do panna cotta as well, the easiest dessert in the world, it needs to be kept cool though.

My go to make beforehand for a lot of people dessert is tiramisu, but the normal version has both raw egg and alcohol in it.

Thanks for the ideas everyone! Unfortunately I won't be cooking the meal, because the timing just won't work out. I might give it another shot in the future.

I'd go visit a few shelters to see whats being done

sort of disagree about lasagna, people are really picky about that stuff and what kind (veggie, gluten, white sauce). spaghetti would be safer, easier and much cheaper (garlic bread, side salad and a sheet cake)

My mother used to cook lasagna for a soup kitchen once a month, but the kitchen gave out a recipe and very strict orders not to deviate from it. I'm a little surprised tnat this place lets volunteers do whatever they like.

I’m willing to help hobos now and again but they won’t be getting gluten free vegetarian lasagna or locally sourced root vegetables.

The recipe my mother had to follow was vegetarian. I think the idea was that meat eaters can eat and enjoy vegetarian lasagna but vegetarians (and those who need meat to be kosher or halal) cannot eat meat lasagna.

Doesn’t spaghetti bring the same issues? Meat sauce vs. plain red, gluten free vs. regular pasta, etc.?

Decent lasagna is pretty expensive to make. At least that's been my experience.

I would rather makes sheets of oven fried chicken and mashed potatoes with salad. I would have to think of something for the vegetarians. I'm sure they are sick of being fed pasta and salad all the time.

^ 40 is catering syle food. Think big batches that are easy to turn out and serve, so backed chicken, instant mashed potatoes/baked potatoes, and colesalaw.

Can eggplant parmesan be make on baking trays? That might be an idea. Or maybe large pots of avalon's soup with good crusty bread and butter.

good ideas for main dish. also roasted potatoes/baked potato, roasted chicken legs etc. and veg coconut curry with rice for vegans.

easier and less mess than flan would be a chocolate cake with whipping cream.

Cook two chilis, nonspicy, one with turkey, the other vegan. You can start them together. I've done this. Huge protein , easy cooking. Throw in some rice, maybe.

Since it turned out you won't be doing this I won't bother with suggestions at this point. If that changes let me know. I do a fair amount of cooking for large groups. I will tell you that the shelter we serve gets lots of Italian so something else always goes over better. For dinner I agree soup isn't quite enough. It really isn't too hard particularly if you can have a few people cooking at home. Hand out the recipes and let each person cook at home. When do the shelter we really are not asked to cater to various preferences or allergies, although if you know ahead of time and how many it isn't too hard to do so.
