Best inauthentic chilli

I really fancy mastering my Euro chilli recipe this weekend. Winter is coming!

I’m going to use Quorn mince and some kind of craft porter, maybe an umami tomato purée I like, cinnamon, cumin and a blend of whatever dried chilli I can get.

Probably to serve with jacket potatoes or crispy tacos.

What’s your best inauthentic recipe?

Dry fry chilli flakes, cinnamon, cayenne and paprika.
Add oil, onion, garlic, beans and protein.
Add cocoa.
Add chopped tomatoes and stock or water.

Patience and low heat.

We like black beans cooked with saffron, topped with some sesame oil-seared scallops and a sprinkling of wasabi sesame seeds. That would be an item on a $50 thali platter.

Feel the inauthenticity!

I’m going with a craft milk stout and three different kinds of chilli - chipotle, habanero and basic supermarket green.

Planning to Instagram it, so maybe a deconstructed guacamole with avocado and beetroot slices on the side.

Bean chili is ok. Don't know if I'd go as far as using cinnamon though.

I’m not going to. I think it would be confusing, this beer I got is pretty sweet and chocolate-y, and finding both chipotle and habanero paste is a bit of a victory for flavour.

Really I don’t want to overpower the taste of that delicious Quorn.

I just throw in lots of vegetables (green pepper, mushrooms, maybe even broccoli). I used to like it a lot, but haven't made it for literally 2 decades, during which I've become a much better cook. So if I did it now I'd probably use more kinds of beans and more kinds of chillis than I did before.

Oh well, if we are going with inauthentic this is nothing like authentic, but what it is is the fastest and easiest tasty meal you will ever prepare.

Ingredients
Beef mince (ground beef)
Garlic
Onion
Packet of taco seasoning mix
Can of red kidney beans
Can of chopped tomatoes
Can of corn kernels
Chili flakes

Chop onions and garlic, fry in oil until softened and then brown the beef, add in the packet of taco seasoning mix to taste, open and pour in the cans including juice of beans corn and tomatoes. Simmer until the liquid has reduced and the consistency is good. Add in chilli flakes to taste.

Serve with rice and or crackers and a little sour cream if you like.

I haven't made chilli in ages. So I can't remember the exact recipe. But the most inauthentic bit is that we always, always had it with jacket potatoes, with coleslaw as a side.

Bottle of Ketchup. More or less.
Large Can of diced tomatoes.
Pound or so of Ground beef browned
Several cans of kidney beans 2?3?4? Drained
Lots of chili spice- quarter cup? More if needed
Chopped onions
Some cumin if it needs it

Is that inauthentic? I don’t know. What is authentic chili?

My inauthentic recipe is DA BOMBA!!

1 lb ground (minced) beef
1 large onion, minced
1 cup minced celery
4 cloves crushed garlic
1 tsp oregano
1 tin Campbell's tomato soup
2 tins of pork and beans in tomato sauce.. Libby's or otherwise... I like the yellow No Name from the Loblaw supermarkets in Canada
1 large tin red kidney beans, drained and rinsed
2 tbsp. common chili powder

Brown beef, onion, celery..... add garlic. add beans and soup.... bring to a simmer.... add chili powder and oregano. Salt and pepper to taste.

I also add hot red chili pepper flakes too if I want a zip

Simple dimple....

I cant even imagine chili made with ketchup. It's got a ton of sugar in it. I might add a tsp of sugar to chili if made with fresh tomatoes but that would be the max.

I've never heard of anyone putting ketchup in Chilli before. I suppose when I make mine without beans, that might be considered inauthentic. I'm not a fan of kidney beans so I usually make it without beans or sometimes with black beans.

Sometimes I like chilli over spaghetti/penne/macaroni/bucatini/farfalle. Or with fritos/doritos. Or in the middle of a hamburger bun. Or over a hotdog/sausage on a bun.


ground beef. kidney beans/black beans. onion.shallot. garlic. cilantro/herbs, spices, salt, pepper. crushed tomatoes. bell peppers. hot peppers. tabasco/pepper sauce.

Sour cream. shredded cheddar. Asiago. more cilantro. more tabasco.

The best inauthentic chili (but authentic to what mom made) is:
1/2 onion diced and browned
1 lb ground beef
1 can kidney beans and 1 can chili or red beans
2 cans stewed tomatoes and 1 can diced tomatoes
1 packet chili seasoning

Serve with Jiffy corn muffins and shredded cheddar cheese.

The sweet stout in my inauthentic chilli makes it. Although black not kidney beans next time. You really need to find flavour wherever you can if you’re using Quorn mince.

Beer is for when you want liquid but you don’t want it to taste of tomatoes or stock.

And cumin (whole seeds before onions, ground cumin after) is the warm brown bass line for any spice mixture in any cuisine.

I variously use water, milk or fruit juice to make stews wetter. If the beer is decent I drink it. If it’s crap it stays in the shop. I’m a Ute if I lived in a pub and there were gallons of the stuff needing using up I’d feel differently.

I need to try the cumin thing, obviously. A bit of jeera in Indian food is good but somehow it cuts through and overwhelmes, like nutmeg does, if there’s a little too much. I’m wary of it.

I've used bison. Venison and elk are even better for chili.

-Cilantro
-Chili powder

Whatever else looks good.
I add the cumin. And swap beef out for bison. And, add 1 bag of frozen corn. And really, most times I use the McCormick spice pack.
I've used bison. Venison and elk are even better for chili.
Venison is perfect for chili. Small cubes instead of ground.
