Trinities

Mirepoix is boring. Lately I've been using a quad of ginger, shallot, scallion, and garlic - this one is solid. Sofrito is another one I like to use - garlic, onion, tomato.

What do you use for bases?

Mirepoix and the cajun trinity. Ginger, shallot, scallion is a good one.
This is the only musical: the mouth. And hopefully the brain attached to the mouth. Right? The brain, more important than the mouth, is the brain. The brain is much more important.

How are we defining trinity then?

I like sesame oil, toasted sesame seeds, palm or other white vinegar, and kecap manis (with cooked spinach or salted cucumber, for example).

I learned a few days ago that from Rome north, there is an Italian taboo against using onions and garlic in the same dish. Silly Northern Italians.

Got tired of it too, so lately yeah changing up the onion for shallots; using dried garlic instead of fresh or leaving it out. Purple onion; red bell pepper instead of green (it gives a different flavour, sweeter). Or green bell pepper no onion no garlic, a little crushed toms; basil.

or fuck it, fresh veg are so fucking expensive here, the TACO SAUCE is on sale for 10 nok get that. IT´s FINE. ADD more crushed toms. Sorted. THIS option is done mostly lately.

PS The Trinity is onion, bell pepper, celery. Mirepoix is onion, carrot, celery.

Tomato, onion, garlic for most things Mexican.

Soy sauce, vinegar, garlic for most things Filipino.
