I purchased some today with total naivety. I was looking for a substitute to sweetened chocolate chips so I could make a keto friendly ganache.

Unbeknownst to me, cocoa nibs are just chipped cocoa beans.... Raw chocolate.... They don't taste very good and only vaguely have a chocolate flavour. I thought they would melt in the micro but no...

Now I have no idea what the hell to use them for. They were really, really expensive and I had bought them at the Bulk Barn.

Could I grind them up in my spice/ganja grinder and use the powder like one would use cocoa powder?

All in all, a total disappointment.

There is sugar free chocolate chips around at some of the specialty stores in town... Very expensive and sweetened with stevia, which I just can't eat...

Try it and see? Think grinding it down might be ok, they certainly work in smoothies.

North America is light years ahead of the uk with food alternative but we have Sweet freedom chocolate syrup, actually made of dates. It bloody lovely, if you can find it.

But yes I think grinding them finely would give you effectively cocoa powder.

Cocoa powder is what is left when the cocoa butter (fat) is pressed out of the nibs (cracked cocoa beans). I think that ground into a fine powder, the nibs might be better than cocoa powder for most uses. Experiments (and reports of results) are called for.

Yes that’s a point, the fat in the nibs may cause your grinder to goo up, but still worth a try if it’s easy to pull it apart and clean it.

I made my own once. Found cacao fruit for sale in a market. Opened it and fermented and dried the pods and everything.

I believe I then used the nibs in homemade ice cream.
