New Hot Sauce Bongo Pili Pili

Great stuff made somewhere near TO-chunky/homemade texture/goes with everything has a real Pili Pili flavour-odd thing though that as shown the label says Do Not Refrigerate.

I don’t usually refrigerate store bought hot sauces like those. They’re full of vinegar. No need

Hot sauce question!

I made a large batch yesterday - 16 bottles - trying to make a sweet chilli sauce. Lots of fresh mango, Scotch Bonnet and honey, pinch of allspice.

Now, it still has to settle but I thought it tasted amazing before heating and a little bit too caramelised after. You need to boil, simmer and bottle while still hot to stop it going off.

Is there a way around this? Adding sugar at the end instead of before heating maybe?

No need to panic! Next day, after cooling down, the bitterness had gone.

It’s a triumph - there’s heather honey and mango at the first taste, then Scotch Bonnet heat, then the honey returns.

Doesn't really look bumpy as a reaper to me, but it does look like naga.

I find they're generally easier to identify once they get some color and mature.

Apparently, they also have one for plants. I haven't used either myself, but might be worth a shot.
