That’s fantastic, thanks for sharing. I hope the restaurants last.

I was in Mexico last this time in 2015. Christmas in Playa and New Year in CDMX. I sensed interesting vegan cuisine was to be had, but being with an omnivore and a pescatarian at the time, I didn’t eat very well. Sad.

Mexico City's food culture is pretty sophisticated, and there are a lot of veggie/vegans among the middle and upper classes. I've been to vegan (Mexican) restaurants there that were quite good, although the Chilango vegans I know tend to default to Indian places.
