I really enjoy the triangle between Beijing, Xi'an, Kaifeng. Shanghai is very skippable imo, unless you're crazy about modern asian mega-cities.

I would add a couple days for Beijing. 3 days seems rushed if you're trying to do a lot of the stuff that there is to do.
